Avocado and Egg Salad Sandwich Recipe

Ingredients
- 2 slices Sara Lee Delightful White Made with Whole Grain Bread
- ½ avocado, chopped
- 3 hard-boiled eggs, chopped
- ¼ cup Greek yogurt
- 1 tablespoon Dijon mustard
- ½ teaspoon lemon juice
- 2 tablespoons scallions, chopped
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 tomato slices
Directions
- Mix ingredients together in a large bowl. On one slice of bread, place the two slices of tomatoes. Then scoop on a large helping of the avocado-egg mixture. Top with remaining bread slice. Enjoy!
