Eggcellent Sandwich Recipe

Ingredients
- 8 slices Sara Lee® Artesano® Smooth Multigrain Bread
- 4 hard boiled eggs, chopped
- ½ cup red onion, finely chopped
- 1-2 stalks celery, chopped
- 2-3 pickles, chopped
- 2 tablespoons dill, chopped
- 1/3 cup mayo
- 2 tablespoons Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- Squeeze of lemon
- Romaine or leafy green lettuce
Directions
- 1. Add to a medium-sized bowl red onion, celery, pickles, dill, mayo, Dijon mustard, garlic powder, salt and pepper and mix until well combined. Add in chopped eggs and toss lightly. Taste and add a squeeze of lemon and toss again gently. Put mixture in fridge to chill slightly if desired.
- 2. To make the sandwich, on 1 slice of bread add some of the egg salad and top with a slice of lettuce. Add a second slice of bread and serve immediately.
