Make Ahead Breakfast Bites Recipe

  • 12 slices Sara Lee® Honey Wheat Bread
  • 4 slices deli ham, chopped into bite-sized pieces
  • 1 cup Cheddar cheese, shredded
  • 8 large eggs
  • 1 cup milk
  • 2 teaspoons mustard
  • 1/4 cup chives, chopped
  • Salt and Pepper, to taste


  1. 1. Preheat oven to 375°F. Grease a muffin tin using butter or nonstick cooking spray.
  2. 2. With a rolling pin, roll out each slice of bread and press into each hole of the muffin tin. Next, fill each evenly with ham and shredded Cheddar cheese.
  3. 3. In a small bowl, whisk together eggs, milk, and mustard. Then pour the egg mixture evenly over each muffin tin hole. Sprinkle chopped chives on the top of each, and salt and pepper to taste.
  4. 4. Bake for 10-12 minutes or until golden brown on top and cooked through the middle.
  5. If freezing for later, let fully cool. Then, place breakfast bite in a single layer in a freezer-safe bag or container. When ready to eat, remove from freezer and breakfast bite in a moist paper towel. Microwave for approximately 90 seconds, checking every 30 seconds.
