Grilled Chicken with Apple Slaw Recipe

  • 4 Sara Lee® Artesano™ Buns
  • 3 tablespoons lemon juice
  • 2 tablespoons parsley, chopped
  • 1 teaspoon thyme, chopped
  • ½ teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 boneless, skinless chicken breasts
  • 1 cup spinach
  • Apple Slaw (recipe follows)
  • Lemon Mayo (recipe follows)
  • Apple Slaw Ingredients:
  • 2 cups cabbage, shredded
  • 2 cups apple, shredded
  • ½ cup mayonnaise (or Greek yogurt)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Lemon Mayo Ingredients:
  • ½ teaspoon garlic powder
  • 1 tablespoon lemon juice


  1. 1. In a 1-gallon plastic zip lock bag, combine olive oil, lemon juice, parsley, thyme, oregano, salt and black pepper. Add chicken, seal the bag, massage the marinade into the chicken, and refrigerate for 2 hours.
  2. 2. Make the Apple Slaw. In a large mixing bowl, combine cabbage, apple, mayo, apple cider vinegar, sugar, salt and black pepper. Gently stir until well combined and set aside.
  3. 3. Make the Lemon Mayo. In a small mixing bowl, combine mayo, garlic powder, lemon juice and crushed red pepper. Stir well and set aside.
  4. 4. Heat the grill to medium-high heat. Grill the marinated chicken until cooked-through (about 3 minutes per side).
  5. 5. Spread Lemon Mayo on Bun bottoms. Layer each with spinach, a grilled chicken breast, a generous scoop of Apple Slaw and Bun lids.
