Roast Beef & Mango Relish Toast Recipe

Ingredients

  • 4 slices Sara Lee® Delightful™ Healthy Multi-Grain Bread, toasted
  • 2 mangos, diced
  • ½ cup corn, cooked
  • ¼ cup red pepper, chopped
  • ¼ cup red onion, chopped
  • 1 teaspoon lime juice
  • Salt and pepper, to taste
  • 8 slices roast beef
  • Cilantro mayo (recipe follows)
  • Cilantro Mayo Ingredients:

  • ½ cup mayonnaise
  • ½ cup Greek yogurt
  • ½ cup cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon lime juice
  • ¼ teaspoon salt

Directions

Cilantro Mayo Directions:

1. Place mayonnaise, Greek yogurt, cilantro, olive oil, lime juice and salt in blender or food processor and blend until well combined. Let cool in refrigerator while assembling sandwiches.

Toast Directions:

1. In a medium bowl, mix together mangos, corn, red pepper, red onion, lime juice, salt and pepper. Set aside.
2. Place 2 slices of roast beef on each slice of toasted bread. Top with mango relish and drizzle with cilantro mayo.
