Roast Beef & Mango Relish Toast Recipe

Ingredients
- 4 slices Sara Lee® Delightful™ Healthy Multi-Grain Bread, toasted
- 2 mangos, diced
- ½ cup corn, cooked
- ¼ cup red pepper, chopped
- ¼ cup red onion, chopped
- 1 teaspoon lime juice
- Salt and pepper, to taste
- 8 slices roast beef
- Cilantro mayo (recipe follows)
- ½ cup mayonnaise
- ½ cup Greek yogurt
- ½ cup cilantro
- 1 tablespoon olive oil
- 1 teaspoon lime juice
- ¼ teaspoon salt

Directions
Cilantro Mayo Directions:1. Place mayonnaise, Greek yogurt, cilantro, olive oil, lime juice and salt in blender or food processor and blend until well combined. Let cool in refrigerator while assembling sandwiches.
1. In a medium bowl, mix together mangos, corn, red pepper, red onion, lime juice, salt and pepper. Set aside.
2. Place 2 slices of roast beef on each slice of toasted bread. Top with mango relish and drizzle with cilantro mayo.
