Spicy Marmalade Meatball Bites Recipe
Exotic flavors of ginger, citrus and sesame abound in this delectable appetizer.

Ingredients
- 1 package Sara Lee® Artesano™ Bakery Rolls
- 1½ pounds ground chicken
- 1/3 cup breadcrumbs
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon scallions, minced
- 2 tablespoons soy sauce
- ¼ teaspoon black pepper
- 2 containers pickled Asian vegetables (daikon, carrot and radish)
- Spicy marmalade (recipe follows)
- Spicy Marmalade Ingredients:
- 1½ teaspoons sesame oil
- 1½ teaspoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, minced
- 1 tablespoon Sriracha sauce
- ¾ cup orange marmalade
- 1 tablespoon lime juice
- ¼ cup hoisin sauce
Directions
- Spicy Marmalade Directions:
- 1. Heat sesame and olive oils in a saucepan over low heat. Add garlic and ginger and cook, stirring frequently, until golden brown (approximately 2 minutes).
- 2. Add Sriracha, orange marmalade, lime juice and hoisin sauce. Cook, stirring occasionally, until sauce has slightly thickened (approximately 5 minutes).
- Meatball Directions:
- 1. Preheat oven to 500ºF. Spray a 9x13 baking pan with non-stick spray.
- 2. In a large bowl, combine ground chicken, breadcrumbs, garlic, ginger, scallions, soy sauce and pepper. Use hands to thoroughly combine mixture. Shape into balls using about 2 - 3 tablespoons of mixture per meatball. Place meatballs in prepared baking pan and bake for 12-15 minutes.
- 3. Remove meatballs from oven and transfer to a large bowl. Pour spicy marmalade over meatballs and toss to coat.
- 4. Slice rolls in half. Arrange halves, cut side up, on a large serving platter. Place 1 meatball on each roll half. Top with extra sauce, if desired, and pickled veggies before serving.
